Grapefruit Ginger Basil Cooler: A Summer Garden Drink
Some of the best summer recipes are the ones that come together almost effortlessly — a few seasonal ingredients, something cold poured over ice, and a reason to linger a little longer.
This grapefruit ginger basil cooler started as a little summer experiment for our evenings at home. My husband loves a good gin cocktail, and St. George is one of his favorites. I’ve always loved ginger beer as the base for a refreshing mocktail, so I wanted to create something that could be enjoyed both ways — bright and botanical with gin, or simple and sparkling without it.
The inspiration came from what we had around us this season: juicy grapefruit, spicy ginger beer, and garden-fresh basil picked right outside. The grapefruit brings a beautiful tartness, the ginger beer adds warmth and fizz, and the basil gives it that unmistakable fresh flavor that only comes from something grown nearby.
It’s the kind of drink that belongs on a slow summer afternoon, alongside a simple dinner outside, or shared with friends gathered around the table.
What you need
Fresh grapefruit
Ginger beer
Garden-fresh basil
Ice
Gin (optional, for a cocktail version)
How to make it
Gently press a few basil leaves between your fingers or muddle them lightly in your glass to release their aroma.
Fill a glass with ice.
Squeeze in the juice of half a grapefruit.
Top with ginger beer and stir gently.
Garnish with a grapefruit slice and fresh basil.

For the gin version, add 2 ounces of gin before topping with ginger beer.
